Coffee with the roast date on the bag

A café and a small roastery on Veer Nariman Road. We print the roast date rather than a best-before, name the farm where we know it, and say so when we do not.

Three things, done properly

Our catering

Drop-off catering for offices and small events across South Mumbai — sandwiches, pastry and a flask service that keeps coffee drinkable for about three hours rather than the six people hope for.

The food

A short all-day menu cooked in a kitchen the size of a corridor. Six things done well beats twenty done at eleven in the morning, and the croissants are laminated here from Tuesday.

The gelato

Churned twice a week in small batches, four flavours at a time. It sells out most weekends by four and we have decided not to fix that by making more of it.

How we got here

2009

A cart on Veer Nariman Road

Two people, one lever machine and beans somebody else roasted badly.

2013

The first roaster

A 5kg drum in the back. The first six months of it were not good and we sold that coffee anyway, which we would not do now.

2017

The kitchen

Food added, and a second site in Lower Parel opened and closed inside fourteen months. Running two kitchens turned out to be a different business from running one.

2021

Gelato, and stopping wholesale

We stopped supplying other cafés — the volume was pushing the roast towards something safe, and it was making the coffee worse.

Things people ask at the counter

Which coffee should I buy?

If you brew with milk at home, the Chikmagalur — it is roasted a shade darker and holds up. If you drink it black and own a scale, the Ethiopian. If you do not own a scale, buy the Chikmagalur and we will grind it for your machine, because the grind matters more than the bean at that point.

Why is there a roast date and not a best-before?

Because coffee does not spoil, it fades. It is at its best between about five days and five weeks off the roast, and a best-before twelve months out tells you nothing except that somebody wanted the bag to sit on a shelf.

Do you do wholesale?

No, not since 2021. The volume was pushing us towards a roast profile that offended nobody, and that is a different job from this one. We will happily tell you who does it well.

Can I work from here all day?

On weekdays, yes, and there are plugs along the window. On Saturdays and Sundays we ask for the table back after about ninety minutes, which is written on the menu rather than sprung on you.
